The Rocky Road

Robert Frost chose the Road Not Taken….. While I always choose the Rocky Road...ice cream or fudge it is always yummy! Enjoy this vegan version.

What you need:

¾ cup Earth Balance

3 cups sugar

5 ounces of Mimic Crème or coconut milk

1.5 packages of semi sweet chocolate chips

1 container of ricemellow crème

2 tsp vanilla

½ cup almonds or walnuts

1 cup vegan marshmallows (Dandies)

What you do:

Combine butter, milk, sugar in a saucepan

Bring to a hard boil for 5-7 minutes (use a candy thermometer)

Remove from heat

Stir in the chocolate until melted and smooth

Fold in the ricemellow crème

Then let cool for several minutes

Then add nuts and marshmallows

Pour into a greased or parchment lined 9x13 glass pan

Chill until firm (~4 hrs)

Cut into squares.

Enjoy!!!
