Good Ole Fashion Chocolate Chip Cookies

I have tried many a recipe in my day and I think I can say I have found the best recipe!!!
I’ve made these dozens of times and every time they are perfection!!!

Here are the easy steps:

Step 1:
Visit your local Sunflower, Sprouts, or Whole foods. Go to the baking aisle and purchase Ener-G Egg Replacer. You can store this in your pantry for months. It is cheaper than eggs, cholesterol free and made from tapioca. Keep this on hand as this is what is used in all vegan baking recipes.









Step 2:
Next time you are at Trader Joes, Sunflower, Sprouts, or Whole Foods, pick up some  Earth Balance Vegan Butter (not to be confused with Smart Balance – it is not so smart).







Now you have all you need for vegan baking!!! I would not recommend substituting.
I’ve done that for years and finally learned my lesson – stick to the recipe! J


Step 3:
Time to make the cookies!

Ingredients:
4 ½ teaspoons Ener-G Egg Replacer
6 tbs water
1 cup Earth Balance vegan butter, softened
¾ cup evaporated cane juice (sugar)
¾ cup brown sugar
2 tsp vanilla extract
2 ¼ cup white flour (whole wheat isn’t good in this recipe)
1tsp baking soda
1 tsp salt
2 cups semi sweet chocolate chips*
1 cup nuts (optional)


 (*I use the Trader Joe’s brand --  not all brands are vegan so read labels)


Directions:
1.)    preheat oven to 375
2.)    line cookie sheet with parchment paper
3.)    in a blender/food processor mix Ener G egg replacer
        with the water till creamy
4.)    in a large bowl cream the butter, sugar, vanilla extract
5.)    add the Ener-G egg replacer mixture to this and
        mix thoroughly
6.)    in a separate bowl combine the dry ingredients
7.)    gradually add the dry mixture to the wet mixture 
       till dough forms
8.)    add chips and nuts
9.)    bake for 8 minutes… then let cool…




STEP 4:
Enjoy with a cup of refreshing Silk “Brain and Bone Health” Milk!
